🌾 The Harvest Behind the Flame
This Reserve release is our autumn opus — a radiant sauce that bridges orchard sweetness and volcanic heat. Each small batch begins with a slow roast of tomatoes, red peppers, onions, and fruit from the orchard — mango, pineapple, green apple, grapefruit — until their edges caramelize into gold.
We layer that natural sweetness with roasted Apocalypse Scorpion, Habanero, and Thai chilies, softened by rehydrated guajillo, pasilla, arbol, and red hot chilies. The result is not just heat — it’s depth: smoke, fruit, and umami locked in an amber swirl.

Each bottle is finished with a saffron–date infusion, a golden elixir steeped in apple cider vinegar and Vermont-made date syrup.
It threads through the sauce like sunlight through mist — delicate, floral, and impossibly smooth.

Each jar was hot-filled by hand, strained silk-smooth, and left to mature a few days — allowing the saffron to bloom into the fruit and chilies like perfume through fire.
